There is nothing healthier than a vegetarian salad prepared at home.

Carrot and bean salad with feta
Ingredients: 1 kg baby carrots, 200g crumbled feta cheese, few lemon thyme sprigs, 2 tbsp. olive oil, 200g green beans, 400g can butter, 1 red sliced onion, some mint.

1. Heat oven to 220C. Put the carrots into a tin; toss them with the lemon thyme and half the oil, then season. Roast for about 30 min until golden.
2. In the same time, cook the green beans in boiling water for 2 min. Drain and then mix together the green beans, butter beans, remaining oil, onion and feta. Season to your own taste. Toss with the hot carrots, and then tear in the mint just before serving.
