Low carb diets limit carbohydrates — such as those found in grains, starchy vegetables and fruits — and highlight foods high in protein and fat.

Low carb diets are generally used for losing weight. However, some of these diets may have health benefits other than weight loss, such as lowering risk factors associated with diabetes and metabolic syndrome.

You might want to follow a low-carb diet for numerous reasons, and namely:

• You want to change your eating habits
• You enjoy the types of foods provided by low carb diets

As the name says, a low carb diet restricts the type and amount of carbohydrates you consume.

Many carbohydrates can be naturally found in plant-based foods, such as whole grains and legumes (beans, peas etc.), or they can be less complex such as those found in milk and fruit.

Refined carbohydrates added to processed foods in the form of flour or sugars are generally known as simple carbohydrates. Simple carbohydrates are contained in white breads, cookies, pasta, cake, candy, and sugar-sweetened drinks.

Your body uses carbohydrates as its main fuel source. During digestion sugars and starches are broken down into simple sugars. Then they’re absorbed into your bloodstream – hence we are speaking about blood sugar or glucose.

Increasing levels of blood sugar cause the body to release insulin. Glucose is helped by insulin to enter your body’s cells. Some glucose is used as energy by your body. Extra glucose is usually stored in your muscles and other cells for a later utilization or is converted to fat.

The concept of low carb diets is that decreasing carbs lower insulin levels, which causes the body to burn stored fat for energy and ultimately leads to weight loss.

In general, a low carb diet focuses on protein, such as meat, poultry, eggs, fish, and some non-starchy vegetables. It usually excludes grains, breads, pastas, legumes, fruits, various sweets, and starchy vegetables, and some nuts and seeds, as well.
