Spring roast chicken

Ingredients: 6 chicken thighs with bone, 3 sliced onions, 200 gram peas, trimmed asparagus spears, 2 sliced courgettes, 100 gram crumbled feta, 2 tbsp olive oil, salt, rosemary.

1. Place the chicken thighs in a large roasting tin, season and toss with the olive oil, lemon zest, shallots and rosemary. Leave for 20 min and then put in the previously pre-heated oven and roast for 40-50 minutes at 180C until the skin is golden.
2. Meanwhile, bring a large pan of water to the boil and cook the asparagus for 3 min or until tender, adding the courgettes and peas for the final minute.
3. Drain the vegetables and toss in with the chicken, coating well with the cooking juices. Crumble over the feta and serve.
