Roast fish with vegetables
Ingredients: 3 fish fillets, 3 sliced tomatoes, 4 small potatoes cut into wedges, 1 sliced onion, 2 garlic chopped cloves, dried oregano, olive oil, parsley.
1. Heat oven to 200C. Mix the potatoes, onion, garlic, oregano with olive oil and salt. Roast for 15 min.
2. Add tomatoes, and roast for 10 min. Then cover with the fish fillets and cook for 10 mins more. Serve with parsley.
