Baked eggplant stuffed with vegetables
Ingredients: 3 medium sized eggplants, 1 onion, 2 tomatoes, 1 clove of minced garlic, parsley, cheese, salt and pepper.
1. Carve the eggplants.
2. Cut the eggplant pulp, onion and tomatoes into small parts. Season with salt and pepper; add the chopped parsley and garlic.
3. Fill in the eggplants with the mixture. Place them in a previously preheated oven for 30 minutes.
4. When they are almost ready, add the grated cheese as a cover and leave for 2 min more. Serve with baked bread or brochettes.
