Crockpot lentil and apricot soup
Ingredients: 1 cup red lentil , 4 cups water, 1 tsp. oil, 1 tsp. cumin seeds, 1 garlic clove, 1 onion, 2 slices ginger, ÂĽ cup dried apricot, lemon juice, salt, pepper, chilli powder, cilantro.
1. Chop all the vegetables.
2. Add the vegetables together with the lentils (washed and drained) in the crock-pot.
3. Cook all the ingredients in the crock-pot. Add salt, pepper and chilli powder (to taste).
4. Garnish with cilantro when serving.
5. Serve with crusty bread.
