Vegan Sausage Casserole
Ingredients: 2 tbsp. oil, 2 tbsp. basil, 1 pepper (green or red), 1 can tomatoes, 300 ml vegetable stock, 1 onion, 4 potatoes, 2 mushrooms, 1 pack of vegan sausages, pepper, salt.
1. Heat the oil and add onions, mushrooms, peppers and potatoes. Fry for 5 min.
2. Preheat the oven to 200C. Place the vegan sausages in the oven for 10 min. and when the vegan sausages become soft, add the vegetable stock. Simmer for 3 min.
3. Take out sausages, chop into small pieces and add them together with tomatoes to the pan with fried vegetables. Sprinkle with salt and pepper and simmer for 10 min.
