Bean and vegetables tortillas
Ingredients: 4 large flour tortillas, 1 red sliced pepper, 1 green sliced pepper, 500 gr tinned tomatoes, 1 sliced onion, 2 minced cloves of garlic, vegetable oil, 500 gr tinned beans, salt and chilli powder.
1. Fry the onion, and then add the garlic and chilli powder, tomatoes, the drained kidney beans and stir for about 10 min. When the juice diminishes add salt to taste.
2. Fry the peppers in a little oil in another saucepan and set aside. Add the peppers to the other half of the filling.
3. Spread the mixture on tortillas and roll them. Place in a baking pan and put in the oven for about 15 min.
