Hot beans with tomatoes
Ingredients: 2 cans tomatoes (with juice), 2 cans beans, 2 cups frozen corns, 3 stalks diced celery, 2 diced peppers, 2 tbsp. oil, 2 diced carrots, 1 onion, 4 cloves of minced garlic, 2 tbsp. cumin, 1 tsp. oregano, 2 tbsp. chilli powder, salt.
1. Heat oil in a pot, add onion and garlic and sautÃ© 3 min. Increase the taste with spices and cook stirring for approx 1 min.
2. Then place the peppers, carrots and celery in the pot and cook until they just start to soften. Tomatoes and their juice are added and bring to a simmer.
3. Continue to cook the chilli, stirring occasionally, for 20 min. Add beans and corn and cook until the corn and beans have heated through.
4. Salt to your own taste.
