Asian soup with noodles
Ingredients: 200g rice noodles (1 package), 5 cups vegetable broth, 1 cup soy sauce, 250g mushrooms, 2 tbsp. grated ginger, 1 tbsp. olive oil, 4 onions, 4 carrots, 250g green beans.
1. Drain and cut the noodles into a pot.
2. Heat the oil in a pan. Add the mushrooms and cook for 2 min.
3. Add the broth, grated ginger, soy sauce and bring to a boil.
4. Add the carrots, scallions and green beans and simmer the vegetables.
5. Divide the noodles into separate bowls.
