Black Bean Salad

Ingredients: 3 large ears of corn, 1/3 cup any seeds, 1/4 cup lime juice, 2 tbsp. olive oil, fresh chopped parsley, salt (to taste), ground pepper, 500 g black beans, 2 cups cabbage (shredded), 1 diced tomato, 1/2 cup minced onion.

1. Bring some water to a boil in an oven. Add corn, cover and cook approx. 3 min. Cut the kernels from the cobs using a sharp knife.
2. Meanwhile, place pine nuts in a skillet and cook for 3 min.
3. In a bowl whisk lime juice, oil, parsley, salt and pepper.
4. Toss the corn, seeds, beans, cabbage, tomato and onion.
