Indian curry quinoa

Ingredients: 1 cup well rinsed quinoa, 400ml diced tomatoes, 2 tbsp tomato paste, 3 tbsp curry powder, 2 tbsp vegetable oil, 1 large onion, 1 clove minced garlic, 1 diced carrot, 400g peas, , 400ml coconut milk, chopped spinach, salt and pepper.

1. Add quinoa, coconut milk, diced tomatoes (with juice) and tomato paste in a saucepan, and slowly boil about 15 minutes until quinoa is ready.
2. Heat oil in a frying pan and fry the garlic and onion, then add the carrot and peas and saute for 5 min. Finally add the spinach and cook until soft.
3. Mix the fried veggies with the quinoa. Add salt, curry and pepper.
