Peas and Potato Curry

Ingredients: 1 tbs. vegetable oil, 2 sliced onions, 3 sliced red chillies, 1 chopped piece ginger, 2 tsp. cumin seeds, 1 tsp. curry powder, ½ tsp. turmeric, 750g halved new potatoes, 1 lime juice, 500 ml natural yogurt, small bunch coriander, 200-300 ml vegetable stock, 300g fresh peas (or frozen).

Directions:
1. Heat the oil in a large pan. Add the onions and cook over a low heat for 10-15 min until soft. Throw in the chillies, ginger and spices, and cook for a few min. Stir in the potatoes and lime juice, coating in the spice mix.
2. Add the yogurt, coriander stalks and the stock. Simmer slowly for approx. 40 min until the potatoes are soft and the sauce has reduced.

Then add the peas and cook for another 5 min. Sprinkle over the coriander leaves and serve with lime wedges and warm bread.
