Time for a hearty vegetarian stew

Vegetarian stew
Ingredients: 1 tbsp olive oil, 1 peeled and sliced onion, 2 peeled and diced carrots, 1 chopped celery stalk, 600 ml hot vegetable broth, 420g canned drained butter beans, 400g canned tomatoes, chopped parsley.
You can add a can of tomatoes to give more flavour and substance.

1. Heat the oil in a large pan, add the onion and fry slowly for 5 mins. Add the other vegetables, fry over a medium heat for 5 minutes covered until they start to soften.

2. Add the broth and canned tomatoes and slowly covered bring to the boil. Stir for about 10 min and then pour in the beans and cook for another 5 minutes, until the vegetables are soft. Sprinkle with the chopped parsley.
