Super Moist Vegan Cake Recipe
Ingredients: 1/4 cup cinnamon applesauce, 1 tsp. vanilla, 1/2 cup vegan softened margarine, 1 tsp. salt, 2 tsp. cinnamon, 1 cup sugar, 1 1/4 cups flour, 1 1/2 tsp. baking powder, 1/4 cup soy milk, 1 cup grated carrots, 1 cup chopped walnuts.
1. Pre-heat oven to 325C. Grease and flour a baking pan.
2. In a large bowl combine applesauce, vegan margarine, baking powder, cinnamon, sugar, salt, vanilla, and flour and soy milk until well mixed. Add carrots and walnuts and mix well. Spread butter evenly in baking pan.
Bake the carrot cake for approx. 45 min.
