Cherry Tomatoes with Cheese

Ingredients: 10g natural white goats’ cheese, fresh minced basil, 1/2 teaspoon salt, 1/2 teaspoon freshly ground black pepper, 24 cherry tomatoes.

1. Combine the cheese, basil, salt and pepper and mix until well blended.
2. Halve each cherry tomato. Carefully scoop out the pulp using a small spoon to make a hollow.
3. Scoop about 1 teaspoon of the cheese mixture and stuff into a tomato carefully. Serve with toast and pesto sauce.

Basil and ricotta tartlets

Ingredients: 150g tub basil with cashews and parmesan dip, 60g fresh crumbled ricotta cheese, 2 x 60g packets canapé cups, 10 quartered cherry tomatoes.

1. Place dip in a bowl. Fold through ricotta.
2. Place cups on a platter. Spoon 1 level teaspoon dip mixture into each. Top each with a slice of tomato. Season with salt and pepper. Serve immediately.
